Compress Watermelon

Cut the watermelon into cubes and compress them using a vacuum sealer or by placing them in a sealed bag with a little weight on top for about 30 minutes.

Prepare Heirloom Tomatoes

Dice the heirloom tomatoes into bite-sized pieces and set aside.

Make Pistachio Aillade

In a food processor, combine pistachios, a handful of basil leaves, and a pinch of salt. Pulse until finely chopped, then slowly drizzle in olive oil until you reach a sauce-like consistency.

Prepare Vinaigrette

In a small bowl, whisk together red wine vinegar, sorghum syrup, olive oil, salt, and black pepper until well combined.

Combine Salad

In a large bowl, gently toss the compressed watermelon, heirloom tomatoes, and remaining basil leaves. Drizzle the vinaigrette and top with pistachio aillade.

Serve immediately, garnished with extra pistachios if desired.
