    Caramelize the Onions

    In a pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes. Remove from heat and set aside.

    Cook the Sausage

    In the same pan, add the fennel sausage and cook until browned and fully cooked, breaking it into smaller pieces with a spatula, about 8-10 minutes. Remove from heat.

    Prepare the Peppers

    In a separate pan, heat the remaining tablespoon of olive oil. Add the sliced bell peppers and sauté until softened, about 5-7 minutes. Season with salt and black pepper to taste.

    Assemble the Hot Rod

    Preheat the oven to 425°F (220°C). On a baking sheet, spread the tomato sauce as the base. Layer the caramelized onions, cooked fennel sausage, pepperoni, sautéed peppers, and shredded mozzarella cheese on top. Sprinkle crushed chicharrón over the cheese.

    Bake in the preheated oven for about 15-20 minutes or until the cheese is bubbly and golden.
