Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Kennebec potatoes. Cut them into evenly sized fries (about 1/4 inch thick). Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Herb Preparation

    Finely chop the fresh herbs of your choice. You can use a combination of rosemary, thyme, and parsley for a flavorful blend.

    Fry the Potatoes

    Drain and pat the potatoes dry. In a large pot or deep fryer, heat the olive oil to 350°F (175°C). Carefully add the potato fries in batches, avoiding overcrowding. Fry until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil.

    Season the Frites

    While the fries are still hot, sprinkle them with salt, pepper, and the chopped herbs. Toss gently to coat the fries evenly.

    Serve the herb frites hot with ketchup on the side for dipping.
