Prepare the Salsa Brava

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in the tomato sauce, smoked paprika, cayenne pepper, salt, and black pepper. Simmer for about 10 minutes until thickened. Adjust seasoning to taste.

Make the Chimichurri

In a food processor, combine parsley, cilantro, red wine vinegar, minced garlic, olive oil, and red pepper flakes. Blend until smooth. Adjust seasoning if necessary.

Cook the Potatoes

Preheat the oven to 425°F (220°C). Cut fingerling potatoes in half lengthwise and toss them with olive oil, salt, and pepper. Roast in the oven for 25-30 minutes until golden and crispy.

Prepare the Radishes

Slice the radishes thinly and set aside.

Assemble the Dish

Once the potatoes are cooked, arrange them on a serving platter. Drizzle with salsa brava, top with slices of serrano ham and manchego cheese, and garnish with radish slices. Serve with chimichurri on the side.
