    Make the Cathead Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Drop large spoonfuls of the dough onto a greased baking sheet and bake for 15-20 minutes until golden brown.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.

    Make the Bacon Gravy

    In the same skillet, add the house made sausage and cook until browned. Stir in the flour and cook for 1-2 minutes. Gradually add milk while stirring to create a smooth gravy. Season with salt and pepper to taste. Keep warm.

    Fry the Eggs

    In a separate skillet, add a little oil if needed and heat over medium-low. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny.

    Assemble the Dish

    On a plate, place a cathead biscuit, top with the sausage gravy, and add a sunny-side-up egg. Sprinkle with shredded cheddar cheese, diced Fresno pepper, and chopped chives.
