Prepare the Breading
In a bowl, mix together flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold beer or sparkling water until combined and smooth.

Heat the Oil
In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C).

Coat the Cod
Dredge each cod fillet in the breading mixture, ensuring they are well-coated.

Fry the Cod
Carefully place the coated cod fillets in the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On each bun, layer a fried cod fillet, a leaf of lettuce, slices of tomato, and thinly sliced onion. Top with the other half of the bun.

Serve the sandwiches hot with a side of fries.
