Prepare the Loin

Season the prime strip loin with salt and black pepper. Let it sit at room temperature for 30 minutes.

Sear the Loin

In a hot skillet, sear the strip loin on all sides until browned. This should take about 3-4 minutes per side.

Cook the Loin

Transfer the seared loin to a preheated oven at 400°F (200°C) and cook until the internal temperature reaches 130°F (54°C) for medium-rare, about 15-20 minutes.

Make the Hazelnut Butter

In a food processor, blend the hazelnuts with butter until smooth. Set aside.

Prepare the Pink Peppercorn Jus

In the same skillet, add vegetable stock and pink peppercorns, scraping up any browned bits. Simmer until reduced by half, about 5-7 minutes.

Pickle the Mustard Seeds

Soak mustard seeds in vinegar for at least 30 minutes before serving.

Crispy Kale

Toss kale with olive oil, salt, and black pepper. Bake in the oven at 350°F (175°C) until crispy, about 10-15 minutes.

Slice the strip loin and arrange on plates. Top with Stilton cheese, hazelnut butter, drizzle with pink peppercorn jus, and garnish with pickled mustard seeds and crispy kale.
