Prepare the Pork Belly

Preheat your oven to 300°F (150°C). Score the skin of the pork belly and season generously with salt and black pepper. Place the pork belly in a roasting pan and cover it with guava paste.

Roast the Pork

Roast the pork belly in the preheated oven for about 3 hours, or until the meat is tender and the skin is crispy. Baste with the drippings occasionally.

Cook the Sweet Potatoes

While the pork is roasting, peel and cube the sweet potatoes. In a saucepan, melt the butter over medium heat until it turns brown. Add the sweet potatoes and cook until tender, about 15-20 minutes.

Braised Chard

In a separate pan, sauté the chard in a little olive oil until wilted. Season with salt and pepper and set aside.

Prepare the Bourbon & Vanilla Pears

Slice the pears and cook them in a saucepan with bourbon and vanilla extract until softened, about 10 minutes.

Serve

Slice the pork belly and serve it with brown butter sweet potatoes, braised chard, and bourbon & vanilla pears.
