    Prepare the Ingredients

    Start by cutting the chicken into pieces and seasoning with salt and pepper. Chop the bacon, slice the mushrooms, and peel the pearl onions. Mince the garlic.

    Cook the Bacon

    In a large Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.

    Brown the Chicken

    In the same pot, add the seasoned chicken pieces and brown them on all sides. Remove the chicken and set aside.

    Sauté Vegetables

    Add the remaining tablespoon of olive oil to the pot. Add the pearl onions and mushrooms and sauté until they are browned. Add the minced garlic and cook for an additional minute.

    Combine Ingredients

    Return the chicken and bacon to the pot. Add the thyme, bay leaf, red wine, and chicken stock. Bring to a simmer.

    Cook the Coq au Vin

    Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, until the chicken is tender and the flavors meld together.

    Remove the bay leaf, adjust seasoning with salt and pepper if necessary, and serve hot with crusty bread or over mashed potatoes.
