Slice the Cheddar, Brie, and Gorgonzola into bite-sized pieces. Arrange them on a large serving platter, grouping them by type.

Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let cool.

While the quinoa is cooking, chop the mixed greens, cherry tomatoes, cucumber, and red onion into bite-sized pieces. Place them in a large salad bowl.

Once the quinoa has cooled, add it to the salad bowl along with the grilled chicken breast (sliced) or chickpeas and feta cheese. Mix well to combine.
