Preparing the Chicken

Marinate the Chicken
In a bowl, combine 2 tablespoons of olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat evenly. Let marinate for 15-30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Assembling the Salad

Prepare the Salad Base
In a large salad bowl, add 4 cups of mixed greens and 1 cup of halved cherry tomatoes.

Make the Vinaigrette
In a small bowl or jar, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and black pepper to taste.

Combine Everything
Slice the grilled chicken into strips and place it on top of the mixed greens and tomatoes. Drizzle the vinaigrette over the salad and toss gently to combine.
