    Prepare the Sweet Potatoes

    Peel and dice the sweet potatoes into small cubes. In a large pot, bring water to a boil and add the sweet potatoes. Cook for 10-15 minutes until tender. Drain and set aside.

    Combine Filling Ingredients

    In a large mixing bowl, combine the cooked sweet potatoes, black beans, corn, and chopped cilantro. Mix well to combine all the flavors.

    Prepare the Slaw

    In a separate bowl, toss the shredded red cabbage with a pinch of salt to soften it slightly. Set aside.

Vegan Chipotle Aioli

    Make the Aioli

    In a blender, combine silken tofu, chipotle peppers, lemon juice, garlic powder, and olive oil. Blend until smooth and creamy. Adjust seasoning with salt to taste.

Assembling Tacos

    Warm the Tortillas

    Heat the white corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    Assemble the Tacos

    On each tortilla, layer a generous amount of the sweet potato filling, followed by a handful of the red cabbage slaw. Drizzle with the vegan chipotle aioli and top with extra cilantro if desired.
