Method
Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C) for roasting the corn.
Prepare the Corn
Shuck the fresh corn and remove all the silk. Place the ears of corn on a baking sheet.
Season the Corn
Drizzle the corn with 1 tablespoon of olive oil and sprinkle with salt and black pepper. Turn the corn to coat evenly.
Roast the Corn
Roast the corn in the preheated oven for about 25-30 minutes, turning occasionally, until the kernels are slightly charred and tender.
Salsa Assembly
Chop the Vegetables
While the corn is roasting, dice the red bell pepper, red onion, and jalapeño pepper. Remove the seeds from the jalapeño if you prefer less heat.
Mix the Ingredients
Once the corn is done roasting, let it cool for a few minutes. Cut the kernels off the cob and place them in a large mixing bowl. Add the diced vegetables and chopped cilantro.
Add Lime and Seasonings
Juice the limes and pour the juice over the salsa mixture. Drizzle with the remaining 1 tablespoon of olive oil, and stir to combine. Adjust seasoning with additional salt and pepper to taste.
