Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks. Place the pork in a slow cooker.

Add the Marinade
In a bowl, mix together orange juice, lime juice, minced garlic, ground cumin, dried oregano, salt, black pepper, and bay leaves. Pour this mixture over the pork in the slow cooker.

Cook the Pork
Add the water to the slow cooker, cover it, and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.

Crisp the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Spread the shredded pork on a baking sheet and broil in the oven for 5-10 minutes, until the edges are crispy.

Make the Slaw
In a large bowl, combine the sliced cabbage, grated carrot, and chopped cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour this dressing over the slaw and toss to combine.

Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat until warm and pliable, about 30 seconds per side.

Place a generous amount of crispy pork onto each tortilla. Top with red cabbage slaw, sliced avocado, and a dollop of sour cream.
