Preparing French Fries

    Wash and Cut Potatoes

    Thoroughly wash the Russet potatoes under cold water. Peel them if desired, then cut each potato into long, even strips (about 1/4 inch thick).

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water for at least 30 minutes. This helps to remove excess starch and results in crispy fries.

    Dry the Potatoes

    After soaking, drain the water and pat the potato strips dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, season with salt, black pepper, garlic powder, and paprika to taste. Toss gently to ensure even coating.

    In a medium bowl, combine mayonnaise, ketchup, Dijon mustard, honey, and lemon juice.

    Stir the mixture until smooth and well combined. Adjust seasoning with salt and black pepper to taste.
