    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

    Add Wet Ingredients

    Create a well in the center of the dry ingredients and add the vegetable oil (or lard) and warm water. Mix with a fork or your hands until the dough starts to come together.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5 minutes until it is smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.

    Rest the Dough

    Cover the dough with a clean kitchen towel or plastic wrap and let it rest for at least 30 minutes. This helps to relax the gluten.

    Divide the Dough

    After resting, divide the dough into 8 equal pieces and shape each piece into a ball.

    Roll the Tortillas

    On a floured surface, take one ball of dough and roll it out with a rolling pin into a thin circle, about 8 inches in diameter. Repeat with remaining dough, stacking the rolled tortillas with parchment paper in between to prevent sticking.

    Cook the Tortillas

    Heat a skillet or griddle over medium-high heat. Once hot, place one tortilla in the skillet and cook for about 30 seconds or until bubbles form and the bottom starts to brown. Flip and cook the other side for another 30 seconds. The tortilla should be cooked but still soft.

    Keep Warm

    Remove the cooked tortilla and place it in a clean kitchen towel to keep warm. Repeat the cooking process with the remaining tortillas.
