Marinating the Chicken

    In a bowl, mix together lime juice, orange juice, olive oil, ground cumin, chili powder, garlic powder, salt, and black pepper to create the marinade.

    Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Making the Red Cabbage Slaw

    Combine Slaw Ingredients

    In a large bowl, combine the thinly sliced red cabbage, grated carrot, and chopped cilantro.

    Dress the Slaw

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well to combine.

Cooking the Chicken
