    Prepare the Short Ribs

    Preheat the oven to 300°F (150°C). Season the short ribs with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.

    Braising Liquid

    Pour in the red wine and scrape the bottom of the pot to deglaze. Add beef broth, thyme, and rosemary. Bring to a simmer.

    Braise the Ribs

    Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3 hours, or until the meat is tender and falling off the bone.

    Prepare the Grits

    In a separate pot, bring 4 cups of water to a boil. Stir in grits and cook according to package instructions. Once cooked, stir in butter and cheddar cheese until melted and creamy.

    Cook Asparagus

    While the ribs are braising, blanch the asparagus in boiling water for 2-3 minutes until tender. Remove and char on a grill or skillet for added flavor.

    Serve

    Plate the braised short ribs over a bed of cheddar grits, garnish with candied vegetables, charred asparagus, and crispy onion straws. Serve with au jus on the side.
