Hand Cut Truffle Fries

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thick fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Preheat the Oil
In a deep fryer or large pot, heat oil to 350°F (175°C).

Fry the Potatoes
Remove the fries from the water, pat them dry, and fry in batches until golden brown and crispy, about 5-7 minutes per batch.

Season the Fries
Once fried, drain the fries on paper towels and immediately toss them in truffle oil and salt.

Add Garnish
Sprinkle chopped parsley and grated Parmesan cheese over the hot fries before serving.

Prepare the Aioli
In a small bowl, mix mayonnaise with malt vinegar until well combined.
