Preparation Steps

    Cook the Grits

    In a medium saucepan, bring the water to a boil. Stir in the grits and season with salt. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until thickened. Once cooked, stir in the Old Mill Cheddar cheese until melted and smooth.

    Prepare the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and cooked through. Remove from heat and set aside.

    Grill the Shrimp

    In a bowl, combine the shrimp, olive oil, minced garlic, paprika, salt, and black pepper. Preheat the grill to medium-high heat and thread the shrimp onto skewers. Grill for 2-3 minutes on each side until the shrimp are opaque and cooked through.

    Cook the Eggs

    Bring a small pot of water to a gentle simmer. Carefully lower in the eggs and cook for 6 minutes for a soft-boiled egg. Remove the eggs and place them in an ice bath to stop the cooking. Once cooled, peel and set aside.

    Assemble the Dish

    To serve, place a generous scoop of cheddar grits on each plate, top with grilled shrimp and chorizo. Halve the soft-boiled eggs and place on top. Enjoy!
