Cooking Instructions

  1. 1

    Prepare the Steak

Remove the dry-aged prime New York strip from the refrigerator and let it sit at room temperature for about 30-45 minutes before cooking. This allows for even cooking.

  2. 2

    Season the Steak

Generously season both sides of the steak with kosher salt and freshly ground black pepper. Make sure to rub the seasonings into the meat for better flavor.

  3. 3

    Heat the Pan

Heat a heavy skillet or cast-iron pan over medium-high heat. Add olive oil and allow it to heat until shimmering.

  4. 4

    Sear the Steak

Once the oil is hot, carefully place the steak in the pan. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

  5. 5

    Flip and Add Aromatics

Flip the steak and add the fresh rosemary to the pan. Continue to cook for another 4-5 minutes for medium-rare, or until your desired doneness is reached.

  6. 6

    Rest the Steak

Remove the steak from the pan and place it on a cutting board. Tent with foil and let it rest for 5-10 minutes before slicing. This helps to retain the juices.

  7. 7

    Serve

Slice against the grain and serve the steak on a plate. Optionally, drizzle with the pan juices or serve with your favorite sides.
