    Prepare the Ingredients

    Trim the Brussels sprouts, cutting them in half if they are large. Slice the red onion into thin wedges. Dice the smoked pancetta into small pieces.

    Cook the Pancetta

    In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the pan.

    Sauté the Onions

    In the same skillet, add the sliced red onion and sauté in the pancetta fat until they are soft and starting to caramelize, about 5 minutes.

    Add Brussels Sprouts

    Add the Brussels sprouts to the skillet, along with the olive oil, salt, and black pepper. Stir to combine and cook for about 10 minutes, stirring occasionally, until the Brussels sprouts are tender and caramelized.

    Finish with Balsamic and Brown Sugar

    Stir in the balsamic vinegar and brown sugar, cooking for an additional 2-3 minutes until the liquid reduces slightly and coats the Brussels sprouts. Return the crispy pancetta to the skillet and toss to combine.
