    Prepare the Pesto Rice

    In a medium saucepan, cook the Carolina Gold rice according to package instructions. While it's cooking, prepare the pesto.

    Make the Pesto

    In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, minced garlic, and 2 tablespoons of olive oil. Blend until smooth. Season with salt and black pepper to taste.

    Combine Rice and Pesto

    Once the rice is cooked, fold in the pesto until well combined. Set aside and keep warm.

    Cook the Black Grouper

    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the grouper fillets with salt and black pepper. Cook the fillets for about 4-5 minutes on each side or until cooked through and flaky.

    Prepare the Candied Carrots

    In a separate saucepan, combine the sliced carrots, honey, and a pinch of salt. Cook over medium heat until the carrots are tender and caramelized, about 8-10 minutes.

    Sauté the Leeks and Artichokes

    In the same skillet used for the grouper, add the sliced leeks and artichoke hearts. Sauté for 3-4 minutes until the leeks are tender.

    Plate the Dish

    On each plate, serve a portion of the pesto rice, top with a piece of black grouper, and arrange the sautéed leeks and artichokes alongside the candied carrots. Enjoy!
