Char the Poblano Peppers
Over an open flame or on a grill, char the poblano peppers until the skin is blistered and blackened. Place them in a bowl and cover with plastic wrap for 10 minutes to steam. Once cooled, peel off the charred skin, remove the seeds, and chop the peppers.

Prepare the Raspberry Mixture
In a mixing glass, muddle the fresh raspberries with lemon juice and simple syrup until well combined.

Mix the Drink
Add the chopped charred poblano peppers, tequila, rum, and muddled raspberry mixture into a cocktail shaker. Fill the shaker with ice and shake vigorously for about 15 seconds.

Strain and Serve
Strain the mixture into a chilled cocktail glass. Garnish with fresh mint leaves and a few whole raspberries.
