1. Prepare Noodles
Cook the flat rice noodles according to package instructions until just tender. Drain and rinse under cold water to stop cooking. Set aside.
2. Stir-fry Protein
In a large skillet or wok, heat vegetable oil over medium-high heat. Add your choice of protein and stir-fry until cooked through. Remove and set aside.
3. Cook Vegetables
In the same skillet, add garlic and stir-fry for about 30 seconds. Add broccoli and carrots, and stir-fry until vegetables are tender-crisp.
4. Add Noodles and Sauces
Add the cooked noodles back to the skillet, along with soy sauce, dark soy sauce, sugar, and white pepper. Toss everything together to combine.
5. Add Eggs
Push the noodle mixture to one side of the skillet and crack the eggs into the other side. Scramble the eggs until just set, then mix everything together.
6. Combine and Serve
Add the cooked protein back to the skillet, toss all ingredients together, and cook for an additional minute to heat through. Serve hot.
