Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, season the chicken with salt and pepper, then coat each piece with cornstarch.

Fry the Chicken
Heat vegetable oil in a deep pan over medium-high heat. Fry the chicken pieces in batches until they are golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

Make the Orange Sauce
In a saucepan, combine orange juice, soy sauce, sugar, rice vinegar, garlic, ginger, and red pepper flakes. Bring to a simmer over medium heat.

Thicken the Sauce
In a small bowl, mix cornstarch and water to create a slurry. Slowly add this to the simmering sauce, stirring until thickened. Remove from heat.

In a large bowl, toss the crispy chicken with the orange sauce until well coated. Serve immediately.
