    Prepare the Ingredients

    Wash and chop the mixed vegetables into bite-sized pieces. Mince the garlic and ginger.

    Toast the Cashews

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cashew nuts and toast them for about 3-4 minutes until they are golden brown. Remove from the skillet and set aside.

    Stir-Fry the Vegetables

    In the same skillet, add the remaining olive oil and sesame oil. Once hot, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for 5-7 minutes until they are vibrant and tender-crisp.

    Add Sauce and Cashews

    Pour in the soy sauce, and season with salt and black pepper to taste. Stir in the toasted cashews and mix well to combine all the flavors. Cook for an additional 2 minutes.

    Garnish and Serve

    Remove from heat and sprinkle with chopped green onions. Serve hot as a side dish or over rice.
