Salmon Preparation

Prepare the Salmon

Preheat your oven to 400°F (200°C). In a small bowl, mix the maple syrup, salt, and black pepper. Rub this mixture all over the salmon fillets and let them marinate for about 15 minutes.

Bake the Salmon

Place the salmon fillets on a lined baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Pickle the Tomatoes

In a saucepan, combine white vinegar, sugar, salt, and minced garlic. Bring to a simmer and stir until the sugar and salt dissolve. Remove from heat and pour over cherry tomatoes in a jar. Let them sit for at least 30 minutes before serving.

Piquillo Broccolini

Sauté Broccolini

In a skillet, heat olive oil over medium heat. Add broccolini, salt, and black pepper. Sauté for about 5-7 minutes until tender. Stir in sliced piquillo peppers and cook for another 2 minutes.

Make the Dressing

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.
