Prepare the Vegetables
Chop the asparagus, broccolini, red onion, and bell pepper into bite-sized pieces. Set aside.
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the red onion and bell pepper, and sauté for 3-4 minutes until they begin to soften.
Add Asparagus and Broccolini
Add the asparagus and broccolini to the skillet. Continue to sauté for another 3-4 minutes until they are tender.
Incorporate Spinach
Stir in the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
Poach the Eggs
In a separate pot, bring water to a gentle simmer. Crack eggs into a small bowl and gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny.
Toast the Bread
While the eggs are poaching, toast the slices of bread to your desired crispiness.
Assemble the Hash
Divide the veggie hash among plates, top with crumbled feta cheese, and place poached eggs on top.
Serve
Serve immediately with the toast on the side and enjoy!
