Prepare the Steak

Season the cube steaks with salt, black pepper, and cayenne pepper. Dredge each steak in flour, shaking off the excess.

Breading the Steaks

In a shallow bowl, whisk together eggs and milk. Dip the floured steaks into the egg mixture, then back into the flour to create a thick coating.

Fry the Steaks

In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded steaks for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Gravy

In the same skillet, remove excess oil, leaving about 2 tablespoons. Add the sausage and cook until browned. Sprinkle in the flour and stir until combined. Gradually whisk in milk, cooking until the gravy thickens. Season with salt and pepper to taste.

Prepare Hash Browns and Eggs

In another skillet, cook hash browns according to package instructions until crispy. Cook the eggs in your preferred style (fried, scrambled, poached, etc.).
