Prepare the Hash Browns

Grate the potatoes and rinse them under cold water. Drain and pat dry with a paper towel. Heat olive oil in a skillet over medium heat, add the grated potatoes, and season with salt and pepper. Cook until crispy and golden on both sides, about 8-10 minutes. Set aside.

Make the Dill Scrambled Eggs

In a bowl, whisk together the eggs, chopped dill, salt, and pepper. In a non-stick skillet, melt a little butter over medium heat. Pour the egg mixture into the skillet and gently stir until just set, about 3-4 minutes. Remove from heat.

Toast the Sourdough

Grill or toast the sourdough slices until golden brown. Spread cream cheese evenly over each slice.

Assemble the Dish

Top each cream cheese-covered sourdough slice with a portion of the scrambled eggs, smoked salmon, thinly sliced red onion, and capers.
