In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Blend Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.

Caramelize Pineapple
In a skillet over medium heat, melt 1 tablespoon of unsalted butter. Add the pineapple rings and sprinkle with brown sugar. Cook for 2-3 minutes on each side until caramelized and golden brown.
Cooking Pancakes

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip and cook for another 1-2 minutes until golden brown.

Place a caramelized pineapple ring on top of each pancake as they finish cooking.
