    Mix Dry Ingredients

    In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; some lumps are okay.

    Cook Pancakes

    Heat a non-stick skillet over medium heat. Lightly grease with butter or cooking spray. Pour about 2-3 tablespoons of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown. Repeat until all batter is used.

    Prepare Fillings

    While the pancakes are cooking, prepare your fillings. For chocolate tacos, have your chocolate chips ready. For fruit tacos, slice strawberries and bananas.

    Assemble Pancake Tacos

    Take one pancake and place a small amount of chocolate chips or sliced fruit in the center. Fold the pancake over to form a taco shape. Repeat for the remaining pancakes.
