Method

Chips Preparation

  1. 1

    Fry the Tortillas

Heat the vegetable oil in a large skillet over medium heat. Cut the corn tortillas into triangles.

  2. 2

    Fry the Chips

Once the oil is hot, add the tortilla triangles in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until they are golden brown. Remove them with a slotted spoon and drain on paper towels.

  3. 3

    Season the Chips

While the chips are still warm, sprinkle them with salt to taste.

Eggs and Assembly

  1. 4

    Cook the Eggs

In another skillet, fry the eggs sunny side up according to your preference. Cook them until the whites are set but the yolks remain runny, about 3-4 minutes.

  2. 5

    Arrange the Chips

Place a generous amount of the fried tortilla chips on a serving plate.

  3. 6

    Top with Salsa Verde

Spoon the salsa verde evenly over the tortilla chips.

  4. 7

    Add the Eggs

Carefully place the sunny side up eggs on top of the salsa-covered chips.

  5. 8

    Garnish

Sprinkle with crumbled cotija cheese, chopped fresh cilantro, and sliced avocado.
