Make the Pastry Dough
In a large bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two balls, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Cook the Sausage
In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess fat and set aside.

Prepare Egg Mixture
In a bowl, whisk together eggs, milk, salt, black pepper, and chopped green onions.

Preheat Oven
Preheat your oven to 400°F (200°C).

Cover with Second Crust
Roll out the second disc of dough and place it over the filling. Seal the edges by crimping with a fork or your fingers. Cut slits in the top crust for steam to escape.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Remove from the oven and let cool for a few minutes before serving.
