Marinate the Cod
In a bowl, mix the maple syrup and soy sauce. Add the black cod fillets and marinate for at least 30 minutes.

Prepare the Vegetables
In a large pan, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pan. Add butternut squash and Brussels sprouts to the pan, adding olive oil if necessary. Season with salt and black pepper. Cook until the vegetables are tender and caramelized, about 15-20 minutes.

Cook the Cod
Preheat the oven to 400°F (200°C). Place the marinated black cod on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the fish flakes easily with a fork.

Combine and Serve
Once the cod is cooked, serve it over the sautéed butternut squash and Brussels sprouts. Top with the crispy bacon and enjoy!
