Prepare the Cajun Fries
Cook the Cajun fries according to package instructions or make homemade fries by cutting potatoes into wedges, tossing them in Cajun seasoning, and frying until golden brown.

Make the Taleggio Gravy
In a saucepan, melt the unsalted butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden. Gradually whisk in the chicken or seafood stock and heavy cream. Bring to a simmer and add the Taleggio cheese, stirring until melted and smooth. Season with salt and black pepper to taste.

Assemble the Lobster Poutine
On a plate, layer the cooked Cajun fries, top with lobster claw meat, drizzle with Taleggio gravy, and finish with cheese curds. Serve immediately.
