    Prepare the Lentils

    Rinse the lentils under cold water. In a pot, combine the lentils with 1.5 cups of water and bring to a boil. Reduce heat, cover, and simmer for about 15-20 minutes until tender. Drain and set aside.

    Cook the Rice

    In a separate pot, rinse the basmati rice under cold water until the water runs clear. Add 1.5 cups of water, salt, and cumin seeds to the pot with the rice. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until rice is fluffy and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Fry the Onions

    In a skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and crispy, about 10-15 minutes. Remove from heat and drain on paper towels.

    Combine and Serve

    In a large serving dish, layer the cooked lentils over the rice. Top with the fried onions. Serve warm, garnished with additional cumin or a side of yogurt if desired.
