Activate the Yeast
In a small bowl, combine warm water (about 110°F/43°C) and honey. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.
Mix the Dough
In a large mixing bowl, combine the flour and salt. Once the yeast is activated, pour it into the flour mixture and stir until a shaggy dough forms.
Knead the Dough
Transfer the dough to a floured surface. Knead the dough for about 10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
First Rise
Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape the Pitas
Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten it into a circle about 1/4 inch thick.
Second Rise
Cover the flattened circles with a cloth and let them rest for about 30 minutes.
Bake the Pitas
Preheat your oven to 475°F (245°C). Place a baking stone or an inverted baking sheet in the oven to heat. Once heated, place the pitas on the stone or sheet and bake for 5-7 minutes, until they puff up and are lightly browned.
Cool and Serve
Remove the pitas from the oven and let them cool slightly. Serve warm or store in an airtight container.
