Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a paper towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries in batches to the hot oil. Fry until they are golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, drizzle with white truffle oil and sprinkle with black truffle salt. Toss to coat evenly.

Add Cheese
Shave Parmigiano-Reggiano cheese over the fries and serve immediately.
