Make House-Made Mozzarella
In a large pot, heat the milk over medium heat until it reaches 190°F (88°C). Remove from heat and stir in the lemon juice and rennet. Let sit for 5 minutes until curds form. Using a slotted spoon, transfer curds to a bowl, and let drain for 5 minutes. Knead the curds gently until smooth and stretchy. Form into a ball and set aside.

Prepare the Heirloom Tomatoes
Slice the heirloom tomatoes into thick rounds and arrange them on a serving platter.

Assemble the Dish
Tear the house-made mozzarella into pieces and scatter over the tomatoes. Drizzle with extra virgin olive oil and aged balsamic vinegar. Season with salt and black pepper to taste. Garnish with fresh basil leaves.
