Method

Preparation

  1. 1

    Mix the Ingredients

In a large bowl, combine the Dungeness crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, green onions, Old Bay seasoning, breadcrumbs, egg, salt, and black pepper. Mix gently until all ingredients are well combined.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the crab mixture for at least 30 minutes to help it firm up.

Cooking

  1. 3

    Form the Cakes

Once chilled, remove the mixture from the refrigerator. Form into small patties, about 2-3 inches in diameter.

  2. 4

    Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until shimmering.

  3. 5

    Fry the Crab Cakes

Carefully add the crab cakes to the skillet, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

  4. 6

    Drain and Serve

Once cooked, transfer the crab cakes to a plate lined with paper towels to drain excess oil. Serve warm with lemon wedges and tartar sauce.
