Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

Combine Ingredients
Gradually add the wet mixture to the dry ingredients, mixing until just combined. Fold in the grated carrots and nuts.

Bake the Cake
Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Cream Cheese Icing Preparation

Prepare the Icing
In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.

Frost the Cake
Once the cakes have completely cooled, place one layer on a serving plate. Spread a generous amount of icing on top, then place the second layer on top and frost the top and sides of the cake.
