Prepare the Rib Eye
Trim excess fat from the rib eye steak and cut it into small diced pieces.

Season the Meat
In a bowl, combine the diced rib eye steak with fajita seasoning and 1 tablespoon of olive oil. Mix well and let it marinate for at least 15 minutes.

Grill the Vegetables
Slice the bell peppers and onion into strips. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the vegetables and sauté until they are tender and slightly charred, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Rib Eye
In the same skillet, add the marinated rib eye and cook over medium-high heat until the meat is browned and cooked to your desired doneness, about 5-8 minutes.

Assemble the Tacos
In taco shells, layer the cooked rib eye, grilled peppers, onions, and shredded cheddar cheese.
