1. Prepare the Chicken

Season the chicken breasts with Cajun seasoning on both sides. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the seasoned chicken breasts for about 6-7 minutes on each side or until cooked through. Remove from skillet and keep warm.

2. Cook the Shrimp

In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and sprinkle with Cajun seasoning. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat.

3. Sauté the Vegetables

In the same skillet, add the sliced onions and mushrooms. Sauté for about 5 minutes or until the onions are translucent and the mushrooms are tender.

4. Assemble the Dish

On a plate, place a generous scoop of sautéed onions and mushrooms as the base. Top with the cooked chicken breasts and then place the grilled shrimp on top of the chicken.

5. Serve

Serve the New French Quarter Chicken & Shrimp with a side of creamy mashed potatoes.
