They’re back and even better with grilled shrimp as an option! Choose from specially seasoned rib eye, chicken, or grilled shrimp served on grilled peppers and onions with Tex-Mex rice, sour cream, and pico de gallo. Served with warm tortillas.

    Prepare the Ingredients

    Slice the rib eye, chicken, or shrimp into thin strips. Slice the bell peppers and onion. Set aside.

    Marinate the Protein

    In a bowl, combine the olive oil and fajita seasoning. Add the rib eye, chicken, or shrimp and coat well. Let it marinate for at least 30 minutes.

    Grill the Vegetables

    Preheat a grill or a skillet over medium-high heat. Add sliced bell peppers and onions to the skillet and grill until they are tender and slightly charred, about 5-7 minutes. Remove and keep warm.

    Cook the Protein

    In the same skillet, add the marinated rib eye, chicken, or shrimp. Cook until the protein is cooked through and has a nice sear, about 4-6 minutes for shrimp and 7-10 minutes for rib eye or chicken.

    Serve

    On a large platter, layer the grilled protein over the grilled peppers and onions. Serve with Tex-Mex rice, sour cream, pico de gallo, and warm tortillas on the side.
