Form the Patties
In a bowl, combine the ground beef with salt and black pepper. Form into two equal-sized patties.

Cook the Patties
Heat a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they reach your desired doneness. Place a slice of American cheese on each patty during the last minute of cooking to melt.

Prepare the Texas Toast
In another skillet, melt 1 tablespoon of butter over medium heat. Grill the Texas toast slices in the butter until golden brown on both sides.

Assemble the Patty Melt
Spread signature sauce on one side of each slice of toasted Texas toast. Place the cheese-topped patties on two slices, add the caramelized onions, and top with the remaining slices of toast.

Final Cooking
In the same skillet used for the Texas toast, melt the remaining tablespoon of butter and grill the assembled patty melts for 2-3 minutes on each side until golden brown and crispy.

Serve
Slice the patty melts in half and serve hot with a side of french fries or tots.
