    Make the Churro Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Add flour and stir until the mixture forms a ball. Remove from heat and let cool slightly.

    Add Eggs

    Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

    Heat Oil

    In a large pot, heat oil to 375°F (190°C).

    Fry the Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting with scissors. Fry until golden brown, about 2-3 minutes per side. Drain on paper towels.

    Coat with Cinnamon Sugar

    In a shallow bowl, mix together sugar and cinnamon. Roll the fried churros in the mixture while they are still warm.

    Assemble the Sundae

    In a serving bowl, place a scoop of vanilla bean ice cream. Top with churros, then drizzle with salted caramel and chocolate sauce.
