Cook the Soba Noodles

Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Protein

In a large skillet or wok, heat 1 tablespoon of cooking oil over medium-high heat. Add the chicken slices and stir-fry for about 5-7 minutes until cooked through. Remove from the skillet and set aside. In the same skillet, add another tablespoon of oil, then add the shrimp and stir-fry for about 3-4 minutes until pink and cooked. Remove and set aside. Finally, add the cubed tofu and cook until golden brown on all sides, about 5-6 minutes. Remove and set aside.

Stir-Fry the Vegetables

In the same skillet, add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Add the mixed stir-fry vegetables and stir-fry for about 5-6 minutes until tender-crisp.

Combine Ingredients

Add the cooked soba noodles, chicken, shrimp, and tofu back into the skillet with the vegetables. Pour in the sweet Thai chili sauce and soy sauce, tossing everything together until well combined and heated through.

Garnish and Serve

Remove from heat and transfer to bowls. Garnish with sliced green onions and sesame seeds. Serve hot.
