Prepare the Beer Cheese Sauce
In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in 2 tablespoons of flour to form a roux. Gradually whisk in 250 ml of your favorite beer and then add 200 grams of shredded cheese (like cheddar or a cheese blend). Stir until smooth and creamy. Season with salt and pepper to taste.

Prepare the Chili Sour Cream
In a bowl, mix 150 ml of sour cream with 1 teaspoon of chili powder. Stir until well combined and set aside.

Assemble the Nachos
On a large baking sheet, spread out the tortilla chips evenly. Top with the drained black beans, pulled pork (or chicken), and duck (if using). Drizzle the beer cheese sauce generously over the top.

Bake
Preheat your oven to 180°C (350°F). Bake the nachos in the oven for about 10 minutes, or until heated through and the cheese is bubbly.

Serve
Once out of the oven, drizzle the chili sour cream over the hot nachos. Garnish with sliced green onions and jalapeños, if desired. Serve immediately.
